My Meatloaf

This is my spin on a meatloaf recipe that i love to make

2 pounds ground beef
3 or 4 cloves garlic
diced onion if desired
about 1 to 2 cups ketchup
3 tablespoons flax seeds (I use for the many health benefits)
one egg
1 1/2 cup white cheddar cheese it
1 teaspoon black pepper
2 teaspoons sea salt
squeeze of lemon juice

Preheat oven to 350 degrees
Dice the garlic cloves
Mix,salt,pepper,flax seeds and garlic cloves,
add the cracker crumbles then mix in the beef, egg,
half the ketchup and squeeze of lemon, mix thoroughly.

I form a cake shape and use a desert pan to help grease drain away.
Bake approx. one hour checking not pink inside.
Finally you will add the remaining ketchup on top for the last 10 to 15 minutes.

Quick and easy chili cheese tortilla dip

This quick and easy chili, cheese, tortilla or cracker dip recipe was submitted by a good friend,

1 batch or 3 cans of favorite chili
2 blocks cream cheese
1/4 cup shredded cheddar 
1/3 cup mozzarella
salt and pepper to taste
Tortilla chips or favorite crackers
Super fast and easy to make this one,
preheat oven to 350
using a 9 by 13" pan break up 1 block of cream cheese on the bottom of pan
Next add the chili and break up the second cream cheese on top 
finish by sprinkling with salt and pepper and top with the cheddar cheese
finish with the mozzarella
bake for 30-40 minutes or until cheese is melted and slightly brown.
I have tried this with both tortillas and Ritz crackers and love it both ways.
I also added hot dogs one day and loved that as well. So easy and kids love it.

5 baked mixed veggie chips

1 potato
1 sweet potato
4 or 5 bunches broccoli
3 cloves garlic
1/4 cup almond slices
1/4- shredded parmesan cheese
Few tablespoons extra virgin olive oil
Sea salt and pepper to taste
Sprinkle of ranch seasoning
1/2 lemon
Begin by slicing Garlic, potatoes, and broccoli.
Squeeze the lemon over the broccoli slices.
Preheat oven to 400 degrees.
Coat bottom of 9x13 pan with olive oil.
Arrange the veggie mixture across the surface then sprinkle on the almond slices.
Drizzle oil across the top of veggies then bake until desired texture approximately 20-30 minutes.
Last 5 minutes or so remove from oven and sprinkle with the parmesan cheese then return til melted.
Let stand for several minutes to cool then sprinkle salt and pepper and ranch seasoning to taste.


I was amazed at how good these taste, even picky eaters and children should enjoy the veggies this way.
I normally do not like broccoli or sweet potatoes and I loved it.

1 quick and easy chili cheese corn dog casserole feeds 4 -6


This Chili Corndog Casserole is a quick and easy weeknight dinner recipe filled with chili, hot dogs, cornbread and cheese! A delicious comfort food dinner recipe that is perfect for the whole family.


1 batch or 3 cans favorite chili
2 cups or so diced cheese Velveeta or cheddar
5 hotdogs diced
2 boxes of Jiffy cornbread mix
2/3 cup milk
2 eggs


preheat oven to 400 degrees
This is super easy to prepare
pour chili in a 9x13 pan
add diced cheese and hot dogs evenly
mix the cornbread with milk and eggs
pour or spoon batter evenly across the top.
Let stand a couple minutes before baking for 30 minutes
ensuring the bottom of cornbread cooks completely

my # 1 Breakfast Pizza feeds 4-6

8 large eggs
one batch or 2 cups sausage gravy (see below to prep.)
half pack of bacon
2 cans crescent rolls
1 cup shredded cheddar
olive oil non-stick cooking spray
optional onions, mushrooms, peppers.
Preheat oven to 375 degrees
Cut half pack bacon in half again and cook then set-aside.
Scramble the eggs how you like with optional ingredients and also set aside.
Spray a 9x13 casserole pan with the cooking spray,
then arrange the 2 packs of crescent rolls in the bottom and sides.
Cook these for 10 minutes or until light brown first.
Next cover the whole thing with the sausage gravy, then add the eggs
next, arrange the bacon strips and lastly sprinkle with cheese.
Finally, cook this for an additional 10 minutes and enjoy.

Easy Sausage Gravy

1/2 pound sausage
1/2 cup all-purpose flour
2 cups milk
In a medium or large skillet brown and crumble the sausage
without draining grease mix in the flour and stir until well coated and mixed
on medium heat, continue stirring until thickens 3-5 minutes approx.
Will also thicken as it cools, for thinner gravy use 2 1/2 cups milk instead.

My #1 Favorite Lasagna feeds 4-6

one package of lasagna noodles
one pound of ground beef
one pound sausage
4 cups mozzarella cheese
one 15 ounce package of ricotta cheese
2 cans of Chef Boyardee pizza sauce
3 cloves freshly diced garlic
optional
1/2 cup onion
one can mushrooms
In a large pot bring water to a boil adding a Cpl tablespoons olive oil.
Meanwhile, brown the beef and sausage in a large pan
add the garlic cloves and optional onions and mushrooms then simmer about 5 minutes then add the pizza sauce. (favorite spaghetti or pasta sauce can be substituted)
once boiling carefully separate and add the noodles I crisscross them to minimize sticking together
cook till tender then run under cool water.
preheat oven to 400 degrees
In a Large lasagna pan 9 by 13 or so I rub bottom and sides with olive oil then put about 1/2 cup of the meat mixture along with the entire bottom. Next start layering the noodles cover entire surface then spoon meat across the layer, use one-third of the ricotta cheese by dropping spoons evenly.
sprinkle one cup mozzarella across layer then repeat process 2 more times till top layer is reached add any remaining noodles and cheese on the top layer so it is a little thicker.
Bake until cheese starts to brown usually 35 mins or so.
